LS: What's your favorite dish on the menu?
Sweet P's: "The brisket. Because it's fantastic. Good brisket is hard to do well, and pretty bad if you don't do it right. But we really do it right. It stays in the smokehouse for 12 to 14 hours."
LS: Your menu's food challenge,"El Gigante Comida" was featured on TV's "Man v. Food." Were you surprised he finished it all?
Sweet P's: "Nobody had ever finished it before that! He did it in 30 minutes. It's a four-pound BBQ burrito, a 1/2-pound of mac 'n' cheese, and a 1/2-pound of banana pudding. Let me tell you, that's a lot of food."
