During the five-course meal, each diner will begin with beautifully crafted amuse-bouche, followed by a first course of a sashimi-grade tuna cannoli. From there, enjoy roasted cauliflower and black truffle latte, as well as the chef's signature duck confit and French toast. For your entrée, choose wild Chilean sea bass with Spanish baby octopus, 24-hour braised short ribs with porcini crème, or a modern take on coq au vin made with spring chicken. Last, indulge in tropical fruit sushi or Madagascan vanilla crème brûlée.
The menu for the ten-course Grand Prix meal showcases fresh spring produce. Each diner will start with a seasonally inspired amouse-bouche and blood orange house-cured salmon served with pickled spring onion. The second course is comprised of another signature dish: blow-torched black tiger shrimp. Next, enjoy duck confit with a morel mushroom risotto and seasonal garden leaves, followed by Barnegat Bay day-boat scallops with black truffle and pea puree. Your meal continues with a 24-hour braised short rib, a palate-cleansing cucumber and peppermint granita, Chilean sea bass with Hudson Valley foie gras, and a prime beef assiette. For dessert, the pastry chef will prepare white chocolate and passion fruit cake and coffee pot de crème.
