For Serafina owner Susan Kaufman, Italian cooking has always been about transforming humble ingredients into elegant plates. Inspired by a yearlong expedition to Italy in her 20s followed by two successful restaurants in Alaska, Kaufman opened her now-lionized eatery in Eastlake in 1991. Taste the rustic cooking that made this a Seattle institution, as executed by new executive chef Brian Clevenger, during a six-course dinner with wine pairings, a discussion on pairing food and wine, and a jar of Marasca cherries and signed recipe card to take home ($110). The dinner, on the mezzanine of next-door sister restaurant Cicchetti, is available on June 17 (Father's Day), June 24, and July 8.
The charming Serafina has earned endless King County accolades, including Best Italian from Seattle magazine and Most Romantic from Seattle Metropolitan. The Seattle Post-Intelligencer once gushed that it's "the kind of restaurant that makes a reviewer's job easy." The Venetian-inspired dining room at Cicchetti offers ivy-covered exposed brick and stunning views of the Space Needle and the Seattle skyline.
Chef Clevenger will present each plate with sommelier Salomon Navarro, who will uncork one sparkling wine, three whites, and two reds. The three-hour dinner gets underway with an amuse bouche of Alaskan salmon crudo with grapefruit sorbet, avocado, and fennel. Then comes a local-corn soup with truffles, followed by a friseé salad with smoked guinea hen and hazelnuts. Main courses are pan-roasted halibut with fava beans and fresh chickpeas, and a grilled Oregon rack of lamb with mission figs. Finally, finish with a local-peach semifreddo for dessert, which is as sweet and refined as Kaufman herself.
