Local Chef Gets Creative with Fusion Food
Though we clearly love this spot's sangria, the good news is we can soak up each sip with delicious New Mexican and Latin American dishes, twisted with flavors borrowed from coastal, island, and European cuisine. The result: "Not the normal New Mexican food," according to one diner. Regulars rave about the empanadas -- a scrumptious cheese-and-spinach blend wrapped in a crisp, fried plantain shell -- while the banana-breaded fish tacos add a fruity kick to standard beach fare. The restaurant came to be as the result of a culinary class assignment -- based on the visionary creativity infused in each dish, we'd give head chef Elvis Bencomo an A-plus.
