Derived from the spanish word tapa -- meaning lid -- tapas first manifested as a slice of cheese or ham served atop a perfectly complementary beverage. Though they have since evolved to include a variety of hearty ingredients and sumptuous flavors, these Spanish small plates continue to deliver on their long-standing tradition of keeping diners happy all meal long:
