Way back in 1996, Ramon and Irma Covarrubias set up a little cart at the Maxwell Street Market and used a hand-operated churro machine to pump out one sweet, crispy doughnut after another. These days, their now-famous Mexican pastries are sold in a storefront on South Wolcott Avenue and come in every variation imaginable. The cinnamon-sugar-sprinkled treats come filled with your pick of vanilla, chocolate, strawberry, cream cheese, apple, or pineapple filling.
