You'll learn low-and-slow smokin' skills from pit-master and owner Jared Leonard -- he's been promoting the purity of BBQ in Chicago since Rub's opened in 2010. One of the only pit-masters in Chicago to cook with only wood -- no gas or electricity -- he'll teach you different regional cooking styles, proper meat selection, preparation, and smoking procedure, plus how to make rubs, marinades, mopping sauces, and more. You'll explore the art of fresh from the smoker smoked brisket, smoked pork shoulder, spare ribs, truffled mac 'n cheese, custard-filled cornbread, and Texas caviar of black-eyed peas. You'll leave stuffed full of BBQ goodness and a cookbook stocked with recipes -- the perfect way to ensure your next meal doesn't go up in smoke.
