Start with a crash course in caviar with an eight-part sampling (including Royal Ossetra and American Hackleback); your lesson will touch upon its history, what qualifies roe as real caviar, how it's best served, and why Petrossian, a 92-year-old company, is now a premier retailer. Then, savor a parade of caviar-studded dishes from chef Giselle Wellman—whose French cooking is "poised and direct," according to the Los Angeles Times—plus Champagne and a caviar martini. Expect starters like the Egg Royale with scrambled egg, vodka whipped cream, and caviar; or caviar flatbread with red onion, crème fraîche, capers, and chopped egg. Dip into tomato soup with brioche, two-year-aged cheddar, and caviar, before indulging in striped bass with caviar powder, citrus breadcrumbs, spinach, and lemon foam.
Following dessert (almond crème brûlée or vanilla panna cotta) and coffee, you'll leave with a gift bag of the company's non-caviar goods, such as handmade Parisian chocolates and other candies—in other words, treats to stash in your pantry for the next time you're craving a little taste of Petrossian luxury.
