For Chris Porter, owner of A la Mode Pies in Phinney Ridge, few things are as satisfying as a wedge of pie, whether lattice-topped or crumble-bottomed. And if you share Porter's love, this offer will surely be a slice of happiness: For $90, get a seat in a two-hour pie-making class at the brick cafe on Phinney Avenue, held on select dates January through March. Each class runs from 7 to 9 p.m. and includes tastings from A la Mode's bakery case, espresso from Caffè Umbria, and ice cream from Bluebird Microcreamery.

Starting with just a little flour, butter, sugar, and salt, Porter will demonstrate how to make the perfect crust, then spotlight a few of the season's best ingredients to use as a filling (think key lime, toasted coconut cream, and Mexican chocolate mousse). At the end of the class, you'll be able to take your creation home to enjoy with friends and family. Not only is each class limited to ten people, allowing for concentrated instruction, but Porter will also spend some time fielding questions—the perfect opportunity to learn what causes that crack in the center.

Chris Porter has always loved pie. He fondly remembers afternoons baking in his mother’s kitchen covered in flour. Several years ago, Porter left his gig as a television news reporter in Indiana and moved westward to Seattle to pursue his dream of opening a neighborhood pie shop. In 2009, he started A la Mode Pies as an online pie-delivery business, working out of the small kitchen at Knee High Stocking Company in Capitol Hill. In 2011, Porter moved into his brick-and-mortar location on Phinney Avenue, across from the Woodland Park Zoo. He now serves up to ten pie varieties, depending on the day—using mostly local, organic ingredients—along with espresso and ice cream.
