There, chef Tadashi Ono—whose recipe for grilled scallops appeared on the prestigious Saveur 100 list—will demonstrate his technique with dishes from two of his cookbooks: Japanese Hot Pots—which Serious Eats called "truly incredible"—and the recently published follow-up, The Japanese Grill. You'll go home with a signed copy of the first one.
The epicurean exploration begins with a pair of top-notch seafood dishes: tangy Kumamoto oysters, served with yuzu ice and golden caviar, and seared big-eyed tuna dressed in an avocado-wasabi purée. Next, you'll dig into two warming and restorative hot pots: salmon with white miso and Napa cabbage, and cubed steak with dark miso and winter root vegetables. The bubbling broths are separated by a course of sautéed chicken teriyaki with baked Japanese sweet potatoes. With each course, there'll be a sake pairing selected by an expert sake sommelier. Round out the meal with green tea tiramisu and a dollop of red bean ice cream—a comforting, soulful dish no matter what culinary language you speak.
