My husband and I had a great time with Big Jim and especially his BBQ. The food was great the atmosphere was fun and the info was beyond worth the price. We wish there was a restaurant we could go to for this food everyday.

A lot of good tips for the experienced BBQ person. Injecting the meats has greatly improved their flavor. Your pulled pork recipe is the best I've ever made. Many of the recipes in the cookbook need better explanations/instructions.

You could make some profit if you sold the marinade and rubs you use in class. Also, you could sell t-shirts.

Try smoking the tri-tip first before grilling it, it may be just a tad more tender. Lunch sides were great!
