Beef appears prominently on the menu: in addition to hand-slicing slow-cooked brisket, the cooks begin each morning by grinding fresh beef for burgers. However, smoked turkey, pulled chicken, grilled portobello mushrooms, and homespun side dishes such as corn on the cob and garlic mashed potatoes help round out the selection of hearty home-cooked grub.

And Blue Star's atmosphere is just about as traditional as its food. Wood-paneled walls bear black-and-white photographs, a framed image of the Texas flag, and vintage newspaper clippings, creating a casual, rustic vibe that's reinforced by small accent pieces such as a weathered copper kettle and a snow globe filled with Texas oil.
