At Indian Creek Steakhouse, Chef Richard Dorion grill steaks the Old West way: over an open fire. He and his team hand-pick and cut each piece of meat before placing it atop the flames, which are fueled by fragrant applewood. Each steak has its own title, from the Cowgirl, a 16-ounce top sirloin, to the Rancher, a marbled, 14-ounce ribeye. The Sweetheart combination plate, meanwhile, pairs a 16-ounce sirloin with 16 ounces of prawns for a filling surf-and-turf feast. And the setting is just as rustic and warm as the food—Indian Creek Steakhouse is located in an early 20th Century building in downtown Caldwell. On certain nights throughout the week, visitors can even enjoy Old West wagon rides outside, so long as it isn't raining or hailing tumbleweeds.
