It might seem difficult to translate the traditional Korean dining experience—the long menus, the ultra-tender meats, the score of banchan lined up on the table—to a tricked-out Chevy van, but Mashita makes it work. The food truck's streamlined menu still holds plenty of choices, starting with a dichotomy of handmade steamed buns (ho-pang) and lettuce wraps (known as ssam) as well as weekly specials. Korean-born chef Mikey Reisenberg can fill either of these with traditional meats such as beef bulgogi or vegetarian fillings such as marinated tofu. The steamed buns—"to die for," according to the News Leader—surround the savory proteins and sauces in a soft cloud, whereas the bibb lettuce wraps lend them a satisfying (and gluten-free) crunch. There are even still a few traditional sides onboard, including quick-pickled kimchi and seasoned bean sprouts.
