In fact, thanks to their farm-to-table approach, owners Matt and Laurie Gilligan have essentially turned their restaurant into a showcase for Florida's food system. The state's bustling fishing industry shows up in the bounty of seafood dishes, including sautéed shrimp served over creamy cheese grits with a beer broth. Not to be outdone, local beef and produce suppliers get their due in dishes such as the 904 burger, which chefs craft with a blend of rib, brisket, and chuck. Visitors can even drink local by ordering a craft beer from a Jacksonville brewery such as Intuition or Aardwolf.
