Hermit Woods Winery creates its fine wines from primarily locally grown fruit and raw honey—a principle they may well have adopted from the hermit that inspired their name. Joseph Plummer, the Hermit of Meredith Woods, lived in seclusion for many years, feeding himself almost exclusively with what he could find from the woods. Today, working with local farmers and pickers to find the very best fruits, Hermit Woods Winery makes its Day Lily rhubarb wine, Blue Mead honey wine, and other varietals from organic produce grown in the nearby soil. It's then sold to local merchants, purchased by local citizens, and enjoyed by local palates. Hermit Woods wines uses old world wine making techniques to create new world, barrel aged, dry style wines.
