While the paella was wonderful with white wine and Caribbean flavor, it was surprising not to have saffron or Pimenton de la Vera, which usually are the base for flavor. Many Spanish Paella recipes also use squid ink to crust the bottom. Overall I could tell that there is care and quality in each dish.
