Spanish tapas bar Pintxo (pronounced peen-cho) was opened in 2010 by husband and wife, Cory and Amanda Chigbrow. Their fast paced kitchen produces a vast array of small bites and traditional favorites such as paella, tortilla Española, croquettas de jamon, montaditos de serrano and patatas bravas. They also offer modern takes on traditional dishes from various culinary regions of Spain, including San Sebastian, Barcelona, and Madrid.
Working in Pintxo’s small but mighty kitchen, the chef team use fresh ideas to create flavorful dishes. Their tapas-forward menu often consists of house-cured, poached dishes and unique ingredients. While a majority of the food is sourced locally, some ingredients such as the Spanish cheeses and jamon Iberico de bellota (cured ham from the acorn-fed Iberico pig) are frequently used to create traditional Spanish dishes.
Pintxo was awarded The Eater Award for "Design of the Year" in 2017 and was voted one of the 14 best Tapas restaurants in America by Thrillist.
