India comprises 29 states and seven union territories spread over more than 1 million square miles. Needless to say, the chefs there have developed more than one style of cooking. The chefs at Punjabi Junction, by comparison, aim to condense the diversity of Indian dishes into a single menu. Every day, they put together a lunch buffet with more than 20 dishes, ranging from tandoor-roasted meats to vegetarian curries. They expand the selection come dinnertime, roasting goat to toss it with rice and piling plates with flavorful flatbreads such as garlic naan.
