Independent Distilling Co. doesn't want to imitate anyone's favorite bourbon or whiskey or rum. No, the locals behind this distillery strive for something entirely their own: spirits that celebrate Georgia‘s agriculture and embody the "soul of the South." How do they do it? By sourcing local ingredients, producing the liquor in small batches, and doing absolutely everything in-house—from mashing and fermenting the grain to sealing up the bottle. Here's a look at their signature spirits:
Hellbender Corn Whiskey: It all starts with Georgia–grown corn, which Independent's team mashes by hand and distills twice in a traditional copper-pot still. The owners prefer to sip it neat, but it also makes a mean cocktail. Made from the same mash bill as their Corn Whiskey, it is aged in new charred American White Oak barrels for an average of 15 months. Each batch is distinct with slight variations from the wood contribution. The Bourbon begins with a great depth of oak and vanilla on the nose that is translated on the palate with hints of corn and burnt orange that finishes with rich baking spices.
Independent Rum: Grade-A molasses ferments completely before Independent distills it into white rum. Use this robust spirit in mixed drinks, or serve it with just a squeeze of lime. Made from premium table–grade molasses, Independent Barrel Aged Rum stands alone as a distinctive spirit. The process begins with a long fermentation that is slowly distilled in the copper pot stills then aged in new and used oak barrels, resulting in a full-bodied rum.
