Crispy-Skin Salmon Fillets with Honey Onions and Spinach
Ingredients:
2 filets of salmon, skin on
3 cups fresh spinach
2 tablespoons walnuts, toasted
5 tablespoons olive oil
6 strawberries, cored and cut into quarters
Balsamic glaze (Trader Joe's or Caloguri Vincotto from Italy)
1/4 cup sliced red onion
1/4 cup honey
1 tablespoon vinegar
1/4 cup dry white wine
Salt and pepper
Directions:
Slice red onion very thinly on a mandolin. Set in a small bowl and cover with honey and vinegar.
Salt both sides of the salmon.
In a shallow pan, add 2 tablespoons olive oil. Place the salmon skin side down. Set under the broiler for 3 minutes. Remove the salmon and flip it so that the skin side is up. Pour 1/4 cup of white wine around the salmon. Place under the broiler again for 3 minutes.
In a bowl, add fresh spinach, salt, 3 tablespoons olive oil, and 1 tablespoon vinegar. Toss.
Make a bed of spinach in the middle of the plate and top the bed with the strawberries, a drizzle of balsamic glaze, and ground pepper. Sprinkle with chopped walnuts. Place the salmon in center of the bed of spinach, skin side up. Place three piles of honey drenched onions on the plate in the 12 o'clock, 4 o'clock, and 8 o'clock positions. Enjoy!
