Ma's Restaurant celebrates the flavors of Chinese Islamic cuisine with nearly 200 items on the menu. Chefs simmer 22 different soups, serve prawns 16 ways, and put chicken into more than two dozen dishes enhanced with pickled cabbage, spicy garlic cause, and dough slice noodles. They also plan multicourse dinners for couples or groups of up to 12 people that pair bites of beef and broccoli with tea-smoked duck.
