About Paris Club Bistro & Bar
In a warm, wood-paneled dining room, brass accents glint with the light from chandeliers as a waiter delivers a bottle of wine to its intended table. Above the clink of silverware and bustle of conversation, light jazz filters through the room. It's a scene out of turn-of-the-century Paris, but it's not trapped in a silent movie. Instead, it plays out nightly at Paris Club Bistro & Bar, where chef-partner Doug Psaltis marries the elegance of the Jazz Age with the sophistication of Chicago's modern food scene.
Trained under renowned French chef Alain Ducasse, Psaltis worked with executive chef Christian Eckmann to craft a menu that captures the City of Lights' culinary spirit. Their classic French dishes include a selection of steak frites, shellfish towers, and steak tartare. There's also the spice-roasted duck; drizzled with sauce à l'orange and served with fresh crêpes, it's large enough for two people to share.
In addition to its menu of authentic French cuisine, Paris Club also embraces France's love of wine. Curated by wine director Ryan Arnold, the traditional wine list boasts more than 60 selections sourced from France's most famous wine-making regions. That French spirit also extends to the cocktail bar. There, mixologist Paul McGee puts a Chicago-style twist on French libations. A library of Parisian ingredients—such as bitters and liqueurs—mix into apéritifs and digestifs finished with colorful garnishes. The cocktail bar is also home to the Nine For Nine, a constantly rotating selection of seasonal cocktails designed to reflect the intricacies of their spot on the calendar.
