About Pasta Così
Pasta Così began its life as a retail shop, where chef-owner Billy DiLegge sold prepared Italian entrees, housemade pasta, and his trademark pasta sauces. Over time, though, it became apparent that his creations were destined to be the toast of Branford. Now, Pasta Così is a full-fledged restaurant, home to cuisine inspired by Tuscany and Northern Italy. Read on to learn more:
The Chef: After training at the Culinary Institute of America in Hyde Park, NY, DiLegge opened Pasta Così's first iteration when he was just 22 years old. His dedication to fresh pastas, homestyle sauces, and inventive ingredients has earned him fans as notable as Chef Jacques Pépin and his restaurant a legendary three-week wait for a weekend reservation.
The Pasta: Try the deceptively simple aglio e olio with anchovies, the bacon-accented amatriciana, or the signature Pasta Così, which pairs penne with crumbled sausage, broccoli rabe, and white beans.
The Grill: The eatery also maintains a full grill menu. Popular options include the seared chilean sea bass, the hearty veal chop, and the beef braciole, whose golden raisins, pignoli nuts, and parmesan add their signature flavors to the house marinara.
The Sauces: You can still buy jars of DiLegge's irresistible sauces. Varieties include traditional marinara, spicy arrabiata, earthy puttanesca, and pungent roasted garlic.
