About Tin Star Smoke House
Colorado barbecue might not be as ubiquitous as its Texas or Kansas City counterparts, but it's the specialty at Tin Star Smoke House. Co-owner Andrew Schutt coined the term to describe the restaurant's unique style, which combines elements from different barbecue regions. For example, the sauce is similar to Kansas City's signature, but the sweetness is cut with some Carolina-influenced vinegar. And the rub has more Southwestern flavor than a traditional recipe—a concept that's echoed elsewhere on the menu, like the green chili mac and cheese.
All of the meats are smoked on the premises with a combination of mesquite and applewood. As a result, baby back ribs, pulled-pork sandwiches, wings, and brisket by the pound are imbued with a rich, smoky flavor. The traditional accompaniments—Texas toast, pickles, slaw—are joined by sides likes sweet potato tots, campfire beans, and housemade chips.
